
Alright, so I'm feeling lazy today and didn't want to bother with vegetable lasagna. So I took my left over ingredients from my veggie omelette this morning and threw together a delicious penne pasta dish instead. I sauteed half a green pepper, half a yellow onion, one carrot, and half a small tomato in 1/6 tsp of extra virgin olive oil, added one can of Hunt's original spaghetti sauce, mixed in 2 tbs of Parmesan cheese, salt, and pepper, and simmered til ready. Then mixed that in my penne pasta, and then topped my pasta with freshly shredded mozzarella cheese. Mmm Mmm... soooo good.
I'm feeling great. It just goes to show, a little time and effort can do a lot for your body. I'm learning to love my body with foods that are good and healthy for me, instead of depriving myself of food to lose weight. I started investigating some vegan dishes as well. I definitely don't want to go vegan because I enjoy dairy too much, but I'm not opposed to eating vegan once in a while. As long as it's good for me and tastes amazing, I won't count it out. :)
