Okay, so I just created this blog to talk about food. (Hey, food is a fun subject! Don't judge me. lol.) I'm kinda buzzed right now off of Green Apple Smirnoff; so please excuse the reject humor. Anyways, I've just been trying out a lot of healthier recipes lately because I'm trying to eat right, exercise, and get in shape. My roommate bought a cookbook that is written by Rocco Dispirito (the chef on The Biggest Loser). The cookbook is called "Now Eat This!," and I've tried out some of the recipes. I must say, the ones I have tried are quite good. He has great ways of cutting down the calories in a ton of popular dishes. (Too bad there's no way to cut down the calories in the alcohol I just drank! *tisktisk* Oh well, at least the good food is balancing it out. lol.)
I have a favorite recipe so far out of what I have tried from his book, and I'm going to share that with you.
Tomato and Mozzarella Salad (caprese salad to some)
2 large red heirloom tomatoes, cut into large dice
1 small red onion, sliced thin
6 Oz fresh mozzarella, cut into large dice
3 Tbsp red wine vinegar
1 Tbsp extra-virgin olive oil
3/4 C chopped fresh basil
salt and freshly ground black pepper (to taste)
Serves 4
Fat: 13.1g
Cal: 184/serving
This recipe is really good. Just take my word on it. I like to eat it on some Triscuits or Criss-Cross Crackers.
Now, just a lil' bit ago I got hungry from the Smirnoff I drank (LOL) and decided to whip up something healthy to snack on tonight. I wanted to do this caprese salad, but alas! I didn't have everything I needed. So instead, I decided to dice up a cucumber, 2 small tomatoes, a small red onion, and add the red wine vinegar and olive oil to it because I totally love that vinaigrette. Even though I am buzzed, I know my taste buds are not deceiving me. This combination tastes delicious! It's a different taste than Rocco's recipe because of the lack of basil and the addition of the cucumber, but it's good nonetheless. On top of that, it has virtually no calories because no cheese was added to this recipe. So YAY to that! A delicious, healthy snack with close to no calories is always a good thing. :D
