Penne por favor?

Alright, so I'm feeling lazy today and didn't want to bother with vegetable lasagna. So I took my left over ingredients from my veggie omelette this morning and threw together a delicious penne pasta dish instead. I sauteed half a green pepper, half a yellow onion, one carrot, and half a small tomato in 1/6 tsp of extra virgin olive oil, added one can of Hunt's original spaghetti sauce, mixed in 2 tbs of Parmesan cheese, salt, and pepper, and simmered til ready. Then mixed that in my penne pasta, and then topped my pasta with freshly shredded mozzarella cheese. Mmm Mmm... soooo good.

I'm feeling great. It just goes to show, a little time and effort can do a lot for your body. I'm learning to love my body with foods that are good and healthy for me, instead of depriving myself of food to lose weight. I started investigating some vegan dishes as well. I definitely don't want to go vegan because I enjoy dairy too much, but I'm not opposed to eating vegan once in a while. As long as it's good for me and tastes amazing, I won't count it out. :)

Later, gators!

Getting back in the game.

Okay, I've been a verrrrrry bad girl. I haven't been eating good at all for months because I was going through a depressive rut, feeling sorry for myself due to life just sucking in general. Well, with bad moods come bad food choices. Yesterday, I finally decided noone but myself can make this better. So, here I go again. I'm getting back in the game with healthy eating and exercise. This time, I'm not going to stop.

Today I made a delicious vegetable and cheddar cheese omelette. It was total YUMMMM!

I'm thinking about making a vegetable lasagna either later on today or some time this week. If I do, pics will be posted. :) ta ta for now!

So what?

Okay, my roommate is arguing with me over text message right now that my concoction last night is not "virtually calorie free." Well, I beg to differ. I added up the calories for each thing I put in this cucumber salad, and it ended up being only 235 calories for that HUGE bowl full (not even per serving!). So divide that by 4 or 5 and you get about 59 or 47 calories per serving! I don't know about you, but I call that virtually calorie free. lol. ;)

Yum and YUM!

Okay, so I just created this blog to talk about food. (Hey, food is a fun subject! Don't judge me. lol.) I'm kinda buzzed right now off of Green Apple Smirnoff; so please excuse the reject humor. Anyways, I've just been trying out a lot of healthier recipes lately because I'm trying to eat right, exercise, and get in shape. My roommate bought a cookbook that is written by Rocco Dispirito (the chef on The Biggest Loser). The cookbook is called "Now Eat This!," and I've tried out some of the recipes. I must say, the ones I have tried are quite good. He has great ways of cutting down the calories in a ton of popular dishes. (Too bad there's no way to cut down the calories in the alcohol I just drank! *tisktisk* Oh well, at least the good food is balancing it out. lol.)

I have a favorite recipe so far out of what I have tried from his book, and I'm going to share that with you.

Tomato and Mozzarella Salad
(caprese salad to some)

2 large red heirloom tomatoes, cut into large dice
1 small red onion, sliced thin
6 Oz fresh mozzarella, cut into large dice
3 Tbsp red wine vinegar
1 Tbsp extra-virgin olive oil
3/4 C chopped fresh basil
salt and freshly ground black pepper (to taste)

Serves 4
Fat: 13.1g
Cal: 184/serving

This recipe is really good. Just take my word on it. I like to eat it on some Triscuits or Criss-Cross Crackers.

Now, just a lil' bit ago I got hungry from the Smirnoff I drank (LOL) and decided to whip up something healthy to snack on tonight. I wanted to do this caprese salad, but alas! I didn't have everything I needed. So instead, I decided to dice up a cucumber, 2 small tomatoes, a small red onion, and add the red wine vinegar and olive oil to it because I totally love that vinaigrette. Even though I am buzzed, I know my taste buds are not deceiving me. This combination tastes delicious! It's a different taste than Rocco's recipe because of the lack of basil and the addition of the cucumber, but it's good nonetheless. On top of that, it has virtually no calories because no cheese was added to this recipe. So YAY to that! A delicious, healthy snack with close to no calories is always a good thing. :D

Okay, that's my food ramble for the night! TTYL. :)
